Here are the complete recipe for Spiced Cauliflower Soup.
INGREDIENTS:
- 400gm cauliflower
- 1 medium tomato
- 2 garlic cloves
- Half inch ginger
- 1 large bay leaf
- 2 inches cinnamon
- 8 whole black peppers
- Salt to taste
- Quarter tsp cumin seeds
- 1 tbsp butter/ghee
- Chopped red chilli
METHODS:
- Break the cauliflower into large florets, dice the tomato and peel and roughly chop the ginger and garlic. Place them in a large saucepan with four cups of cold water.
- Add the bay leaf, cinnamon, whole black peppers and bring to boil on high. When it starts bubbling, lower the heat to medium and cook for another 20 minutes until the vegetables disintegrate.
- Next fish out the bay leaf and cinnamon and use a hand blender to puree the soup until thick and smooth.
- Add salt to taste, and spoon into two bowls. Then sizzle the cumin seeds in the butter or ghee in a small pan on high heat. Pour over the soup and scatter the chopped red chillies on top to garnish.
