Meat from sheep aged for more than two years, mutton has a more intense flavour than lamb (meat from sheep four to six months old).

1. It has an intense flavour
Older animals are slightly tougher but have a much more intense flavour due to the fact that they have been maturing and roaming for longer. The flavour is quite gamey and works very well when slow cooked which also helps with the tenderness.
2. It's likely to have been treated well
It’s hard to tell how well a lamb has been treated before buying. With mutton, it's much less likely that this animal has been treated badly as it's not financially beneficial to keep it for longer without having a focus on quality - which in turn leads to better farming practices.
3. It's rich in iron and zinc
In general, mutton has lived for longer and eaten more nutrients and minerals in its life time. Mutton is particularly rich in iron and zinc with helps the body in the formation of blood cells and helps develop the body’s immune system.

It has lived a longer life, and usually a happy one. This is not only good for the animal, but also good for the quality of the meat - a stressed animal releases adrenalin into the blood stream which make the meat practically inedible. Good meat means a stress-free life and death which is why quality should always be high on our priorities.
5. It influences better farming practices
The more we eat the more it influences better farming practices. Older animals have gone out of fashion, but that doesn’t mean that they can’t be really tasty. The same goes for beef, goat and pork.
