Rosehip honey

Here is how to make Rosehip Honey.

INGREDIENTS
  • 1kg rosehips

  • Granulated sugar

METHODS
  • Wash the rosehips and trim as much stem as possible.

  • Put them in a pan with just enough water to cover. Bring to the boil and simmer, topping up the water only if you have to, for about an hour, squishing the rosehips open with a potato masher as soon as they are soft enough.

  •  Once the rosehips are all softened and the seeds are spilling out, turn off the heat.

  • Leave to stand for 10 minutes, then pour into a jelly bag or sieve lined with muslin, suspended over a bowl. Let the liquid drip through into a bowl for a couple of hours – don’t press down on the fruit.

  •  Measure the liquid and pour it into a clean pan. For every 600ml liquid, add 500g sugar. Bring slowly to the boil, stirring to dissolve the sugar, then boil hard for two to three minutes. Pour into sterilised bottles or jars and seal.
