Here is the recipe for Double Chocolate Mini Loaf Cakes.
INGREDIENTS
- 175g Organic Self Raising Flour
- 1 tsp Baking Powder
- 3 Organic eggs
- 275g Organic Caster Sugar
- 50g organic Cocoa Powder
- 50ml Organic Milk
- 100g Butter
- 6 Tbsp Boiling Water
- Chocolate Ganache: 205ml Double Cream, 200g Organic Chocolate
METHODS
- Preheat the oven to fan 140C/conventional 160C/ gas 3
- Line a 12-hole mini loaf tin with mini loaf cases
- Beat together the butter and sugar, add the eggs one by one, slowly mixing.
- Sift in the self raising flour, baking powder and cocoa powder then fold into the mixture. Then add milk and boiling water to moisten.
- Pour into your mini loaf case tins and bake in the oven at 160c fan for 15 minutes until the sponge is light and springy.
- Once cooked take out of the tins and leave to cool on a wire rack.
- For the Chocolate Ganche heat the double cream in a pan then add the chocolate. Leave to set for 12 hours.
- Pipe the Ganache onto the loafs and then decorate with grated chocolate.
