Here is the recipe for Coconut and Cardamom Porridge.
INGREDIENTS:
- 50g whole rolled porridge oats
- 3 bruised cardamom pods (or a half tsp of ground cardamom)
- 200ml almond milk
- 100ml water
- 1 tbs desiccated coconut
- Maple syrup, to taste
- Toasted coconut and flaked almonds
- Berries, or fruit of choice
METHODS:
- Put the almond milk and water in a pot over a medium heat with the bashed cardamom and allow to infuse, simmering for five minutes, then put through a sieve.
- Mix the oats, coconut and cardamom-infused milk, pour into the pot and cook over a medium heat for five minutes, stirring.
- Serve at once, adding your toasted coconut and almonds and any fruit you may want. This is delicious with maple syrup.
