SPRING FRESH TWIN CABBAGE & ORANGE SALAD

Here is how to make SPRING FRESH TWIN CABBAGE & ORANGE SALAD .

INGREDIENTS

  1. 1 cup purple cabbage, washed, strained, shredded

  2. 2 oranges, peeled, sliced

  3. 1 pink grapefruit, peeled, sliced

  4. 1 cup cabbage, shredded

  5. 7-8 cherry tomatoes, halved

  6. 10-12 cashew nuts, toasted

  7. ½ cup curly parsley, finely chopped

For the dressing:
  1. 1 tbsp olive oil

  2. 1 tsp orange zest

  3. 1 tbsp orange jam

  4. 1 tbsp orange juice

  5. 1 tsp ginger juice

  6. Salt to taste

METHODS

  1. Add all the ingredients for the salad to a large mixing bowl.

  2. Mix all the ingredients for the dressing together, then add to the mixing bowl and toss till well-combined
  3. .
  4. Chill for 10-15 minutes.
