Sautéed Aubergine Eggs

Here is the complete recipe for Sautéed Aubergine Eggs.

INGREDIENTS

  1. 1 medium/4 small aubergines

  2. 2 large eggs

  3. 1 small onion

  4. 1 inch ginger

  5. Quarter tsp white sugar

  6. Half tsp cumin powder

  7. Half tsp turmeric powder

  8. 2 red chillies

  9. Salt to taste

  10. 2 tbsp oil

METHODS

  1. Chop the aubergine into bite-sized pieces and plunge them into a bowl with cold water.

  2. They tend to rise to the top, so stick them in a pot and stick the lid on.

  3. This helps them cook later, without just soaking up all the oil in their pores.

  4. In the meantime, chop the onion into small pieces and finely mince/grate the ginger.

  5. Next, bring the oil in a large, non-stick pan to heat on high and when it’s hot, add the sugar.

  6. As the sugar caramelises, stir in the onion, ginger and dry red chillies (if using them) and sauté for five minutes until golden.

  7. Then mix in the turmeric and cumin powders, and drain and toss in the aubergine pieces.

  8. Stir the whole lot well together, cooking the aubergine.

  9. Now, lower the heat to a medium and cover the pot, stirring from time to time to cook the aubergine.

  10. In about 10 minutes, the aubergine would have softened but retained its shape.

  11. Now push the whole lot to one side of the pot.

  12. Then crack the two eggs directly into the pot, gently scramble them and mix them into the aubergines.

  13. To serve, stir in salt to your taste and fresh red chillies.
