Here is how to make Raspberry and Meringue Mess.
INGREDIENTS
- 1 punnet of raspberries (200g)
- 2 tbsp sugar
- 284ml whipping cream
- 2 shop-bought meringue nests
- Crushed biscotti, to garnish
METHODS
- In a pan, heat most of the raspberries with all of the sugar until you have a syrupy coulis.
- Remove from the heat and cool the pan in a bowl of cold water.
- Whip the cream until it forms soft peaks. Crush or crumble the meringue nests.
- Take four short glasses and spoon in alternate layers of whipped cream, crushed meringue and raspberry coulis.
- Garnish with the reserved raspberries and crushed biscotti.
