Raspberry and Meringue Mess

Here is how to make Raspberry and Meringue Mess.

INGREDIENTS

  1. 1 punnet of raspberries (200g)

  2. 2 tbsp sugar

  3. 284ml whipping cream

  4. 2 shop-bought meringue nests

  5. Crushed biscotti, to garnish

METHODS

  1. In a pan, heat most of the raspberries with all of the sugar until you have a syrupy coulis.

  2. Remove from the heat and cool the pan in a bowl of cold water.

  3. Whip the cream until it forms soft peaks. Crush or crumble the meringue nests.

  4. Take four short glasses and spoon in alternate layers of whipped cream, crushed meringue and raspberry coulis.

  5. Garnish with the reserved raspberries and crushed biscotti.
