Marrow Chutney Recipe

Here is the recipe for Marrow Chutney. So lets get started.

INGREDIENTS

  1. 500gm peeled, deseeded and cubed marrow

  2. 3 tbsp soft light brown sugar

  3. 1 whole dry red chilli

  4. 1.5 tsp finely grated ginger

  5. Half cup hot water

  6. 2 tbsp raisins/sultanas

METHODS

  1. Place the marrow in a medium saucepan along with the sugar and the chilli and bring to a high heat stirring briskly.

  2. Stir until you see the marrow losing moisture then add the ginger and water. Cook for 25-30 minutes until the marrow goes translucent and softens, stabbing regularly to help them disintegrate.

  3. Toss in the raisins of sultanas for the last couple of minutes.

  4. Treat this as a fresh chutney and use within a week. Or freeze for up to a month in a tightly sealed container.
