Here is the recipe for most delicious Banoffee Pie.
INGREDIENTS
- 250g Digestive biscuits
- 150g butter
- 200ml caramel sauce
- A ripe banana
- 284ml whipping cream
- Place the butter in a saucepan and while it melts, crush the biscuits in a food processor or using a freezer bag and a rolling pin/mallet
- Save a tablespoon of biscuit crumbs to decorate and mix the rest with the melted butter
- Once combined, layer this into the base of the pie tin, pressing down with your fingers to ensure it reaches the corners
- Spoon in the caramel sauce and spread it evenly over the base
- Finely slice the banana and arrange over the caramel sauce
- Whip the cream until you have moderate peaks, spread this over the pie and finish by sprinkling over the remaining biscuit crumbs
- Keep in the fridge to chill
